As a combat flight sim idiot, Jane’s Longbow (and maybe ATF). The former in particular had an exceptionally well-thought-through concept of campaigns, and marrying that to modern graphics would be… a huge time-suck, as a responsible grownup.

Any one of these that isn't Fallout, Wasteland, or Baldur's Gate. I sorely miss hardcore RPGs.
