Jarlsberg. Hard to find in deli slices now but great on sandwiches and in quesadillas. I first had it when I was a kid and my mom used to take me to a cheese store to cadge samples. Later I read a Donald Duck comic book that featured an obsession with Norwegian cheese so it became my favorite.
