I saw a cheesemonger on tiktok once who was showing Humboldt Fog, and I really wanted to try it. And then a grocery store nearby had some in the "$5 or less" box - hunks of cheese leftover from the main cuts. So I got to try it. And it was tasty. I shared it with a friend & we watched Heathers.
